  • 1 cup rolled oats
  • 1/2 cup sliced almonds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped pecans
  • 1/4 cup coconut flakes
  • 1/4 cup Manuka honey
  • 1/4 cup coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Preheat oven to 350°F (175°C). In a large mixing bowl, combine the oats, almonds, pumpkin seeds, sunflower seeds, walnuts, pecans, and coconut flakes. In a small saucepan, heat the Manuka honey and coconut oil over low heat until melted and well combined. Stir in the vanilla extract, cinnamon, and salt. Pour the honey mixture over the oat mixture and stir until well-coated.

Spread the mixture evenly onto a parchment-lined baking sheet. Bake for 10-12 minutes or until golden brown. Allow to cool completely before breaking into small clusters. Store in an airtight container for up to 2 weeks.
